Brunch is one of my favorite spreads to put together for the holidays and this menu is on repeat for Christmas & Easter at our house. I pulled off a shortened version of this spread for Thanksgiving this year and it has something for everyone! The tofu scramble and the baked French toast are the center piece of this festive meal and crowd pleasers even among non-vegan guests!
