I love avocados! They are packed with healthy fat and I add them to almost every meal. I always serve guacamole and a platter of sliced avocado along-side the tofu scramble. If I am in a hurry, I mash up 4 avocados and add a cup of salsa Fresca, sea salt and a squeeze of lime for a quick and delicious guacamole. When I have more time, I make the following recipe.


  • 4 avocados – use a potato smasher to get it nice and mushy
  • ½ cup finely chopped onions
  • Juice of 1 lime
  • 3 Roma tomatoes finely diced
  • 3 Tbsp. fresh cilantro
  • Salt to taste
  • Pepper to taste
  • 1/8 tsp cayenne pepper


Mix well and serve!
