Glazed Carrots

These glazed carrots are the perfect side dish for Thanksgiving, any holiday, or dinner party. My kids love these and I make them all year long as a special treat to go along side any entrée.

Ingredients

• 2 pounds carrots washed and trimmed. For medium carrots, I cut them in half. For large carrots, I quarter them. The goal should be that all carrot slices should be about the same size.

• 4 tablespoons of vegan butter, chopped up into little pieces.

• 1 Tablespoon avocado oil

• 1 teaspoon salt

• 1/3 cup maple syrup

• 1-2 tablespoons chopped parsley

Instructions

  1. Preheat oven to 425 degrees
  2. Toss the cut carrots in the avocado oil and spread evenly onto a baking sheet.
  3. Drizzle the carrots with the maple syrup and then sprinkle with evenly with the pieces of butter.
  4. Add salt (And some pepper if you like)
  5. Roast the carrots for approximately 35 to 45 minutes or until very tender. Halfway through, take the carrots out and give them a toss so that the maple syrup and butter coat all sides of the carrots.
  6. When tender and slightly browned, remove the carrots from the oven, place onto a serving platter and sprinkle with chopped parsley.
