These glazed carrots are the perfect side dish for Thanksgiving, any holiday, or dinner party. My kids love these and I make them all year long as a special treat to go along side any entrée.
Ingredients
• 2 pounds carrots washed and trimmed. For medium carrots, I cut them in half. For large carrots, I quarter them. The goal should be that all carrot slices should be about the same size.
• 4 tablespoons of vegan butter, chopped up into little pieces.
• 1 Tablespoon avocado oil
• 1 teaspoon salt
• 1/3 cup maple syrup
• 1-2 tablespoons chopped parsley
Instructions
- Preheat oven to 425 degrees
- Toss the cut carrots in the avocado oil and spread evenly onto a baking sheet.
- Drizzle the carrots with the maple syrup and then sprinkle with evenly with the pieces of butter.
- Add salt (And some pepper if you like)
- Roast the carrots for approximately 35 to 45 minutes or until very tender. Halfway through, take the carrots out and give them a toss so that the maple syrup and butter coat all sides of the carrots.
- When tender and slightly browned, remove the carrots from the oven, place onto a serving platter and sprinkle with chopped parsley.
