Vegan & Gluten Free Chocolate Donuts

Just because you are vegan & gluten free doesn’t mean you can’t have a donut now or then! These gluten free vegan donuts are the real deal. They are soft and fluffy, easy to make, and will cure your craving for a donut! Oh… and you won’t feel guilty or sick to your stomach after eating one of these babies! They are light and will leave you feeling satisfied without the heaviness of a traditional fried donut!

Donut Ingredients

  • 2 vegan eggs (I use Bob’s Red Mill)
  • ¾ Cup almond milk
  • ¼ melted vegan butter or coconut oil
  • ¾ cup can sugar
  • 1/3 cup unsweetened applesauce
  • 1/3 cup maple syrup
  • 1 tsp vanilla extract
  • 1 Cup gluten free flour (Favorite brand is Mama’s Almond Blend)
  • ¾ cup almond flour (Favorite brand is Bob’s Red Mill)
  • ¾ cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda

Glaze Ingredients

  • 1 cup confectioner’s sugar
  • 5 Tbsp cocoa powder
  • ¼ tsp salt
  • 2 tablespoons plant-based milk
  • 1 tsp vanilla extract
  • 2 Tbsp melted vegan butter

Instructions

  1. Preheat oven to 375 degrees
  2. In a large bowl, using a hand mixer, blend two tablespoons of vegan eggs with 5 tablespoons of water until smooth and creamy. Add milk, butter or oil, sugar, maple syrup and vanilla extract and blend until smooth.
  3. Add the applesauce and use a whisk to blend.
  4. In a small bowl, add the gluten free flour, almond flour, cocoa powder, baking powder and baking soda and stir until well mixed.
  5. Pour the dry ingredients into the wet ingredients and use a whisk to evenly coat and blend the ingredients. Careful not to over mix (you don’t want the donuts to get overly dense. If you overmix, they won’t be fluffy).
  6. Once the batter is done, evenly distribute into two lightly greased donut pans.
  7. Bake for 15 to 20 minutes. The donut should be firm to touch on top.
  8. Let the donuts fully cool on a baking rack
  9. While the donuts cool, prepare the glaze by mixing all the ingredients until smooth.
  10. Dip each donut, face down, into the bowl of glaze to coat the top.
  11. You can top with sprinkles, coconut, mini chocolate chips, or cacao nibs.
  12. Enjoy!
