These smashed roasted potatoes make the perfect side dish that everyone loves. I like to serve mine with a dallop of coconut yogurt and chopped chives. They are the perfect one bite delight and will disappear off the platter so quickly that you will wish you made a double batch! They are a favorite in my house and I’m sure will be in yours as well!
Salad Ingredients
- 5 cups Romaine lettuce
- 2 cups Arugula
- 3 ears of corn grilled (lightly oiled and salted before grilling)
- 2 zucchinis grilled (lightly oiled and salted before grilling)
- 2 bell peppers grilled (lightly oiled and salted before grilling)
- 4 cups of butternut squash, cubed and roasted in avocado oil, maple syrup and salt
- 4 beets roasted and sliced
- 1 bunch of asparagus grilled (lightly oiled and salted before grilling)
- ½ cup salted Marcona almonds
- ½ to full package of vegan feta (or real feta if you like)
Salad Dressing
- 1/3 cup Dijon mustard
- 1/3 cup honey
- 1/3- ½ cup balsamic vinegar (I like mine vinegary!)
- Juice of 1 lemon
- 1/3 cup of olive oil
