I like to start my day with some sort of fruit which for me, usually comes in the form of a smoothie. It gets the job done if you know what I mean. But, I sometimes get bored of my green smoothies so I usually throw this cereal into my weekly rotation at least once a week. The Sugar Bee apples are AMAZING right now and if you can find these in your grocery store, I highly recommend using this sweet and crisp apple! It makes the cereal extra special. This cereal is also kid friendly and you would be surprised how much kids love this too…especially if you start your kids eating this kind of cereal at a young age!!
Ingredients:
- 1 large apple – coarsely grated (Sugar Bee, Fuji, Envy or Honey crisp)
- 1 banana, thinly sliced
- ½ cup almonds, sunflower seeds, sesame seeds, cashews; or combination of any of your favorite nuts and seeds – coarsely grinded in a food processor.
- 1/3 cup raisins or currants
- 1 tsp. maple syrup or agave
- Cinnamon
- Nutmeg
- Almond milk or your favorite non-dairy milk
- Optional add-ins: You can top with your favorite in-season fruit like blueberries, pear or papaya (some of my favorites). I also like to add a chopped up date.
Instructions
In a bowl, layer the grated apple, banana, optional fruit, nut & seed mixture, raisins and maple syrup or agave. Sprinkle with cinnamon and nutmeg. Top with almond milk.
